Banana Cake


I had about two bunches of ripe bananas and I was tired of making banana muffins. So, I decided to try this banana cake. I eliminated all butter and doubled the bananas to make it slightly healthier (still, not super healthy). It was delicious. This would be really good with a cream cheese frosting too. 


Ingredients
2 1/2 cups of all-purpose flour
 1 tablespoon of baking soda
 1 pinch of salt
1 1/2 cup of white sugar
 3/4 cup of light brown sugar
 2 eggs
8 ripe bananas, mashed
 2/3 cup of milk

Directions
1.       Preheat oven to 350 degrees F (175 degrees C). Grease a square dish (8x8).
2.       In a small bowl, whisk together flour, baking soda and salt; set aside.
3.       In a large bowl, mix white sugar and brown sugar. Beat in eggs, one at a time. Mix in the bananas.
4.       Add flour mixture alternately with the milk to the mixture.
5.       Pour batter into the prepared pan.
6.       Bake in the preheated oven for 30 minutes. Remove from oven and cool.
